Recipe: Roasted Beets with Mint Yogurt

Roasted Beets with Mint Yogurt

This is the easiest way to prepare beets. Once roasted, beets retain their color and the flavor is intensified.

Ingredients

Two whole red beets with stems and leaves, with several round beet slices on a wood surface

For Beets

  • Any beet or combination of golden, white, and Chioggia beets for more interest
  • Olive oil
  • Fresh mint leaves

For Dressing

  • 1 cup plain yogurt
  • ¼ cup sliced red onion
  • 1 clove minced garlic
  • ¼ cup chopped fresh mint
  • Pinch of sugar
  • Salt and pepper to taste

Preparation

Preheat the oven to 425° F. Wash and trim tops and roots of beets to 1 inch. Rub each beet with olive oil and place in shallow roasting pan. Cover with foil and roast the beets for about 1 hour or until easily pierced with a knife.

Meanwhile, mix all dressing ingredients and set aside.

When beets are cool enough to handle, remove skins and cut into slices. Arrange beets on plate and drizzle with yogurt dressing. Garnish with fresh mint leaves. Serve warm or chilled.
